If matching champagne with meat does not seem obvious, there are nevertheless very beautiful resonances to discover. "Rosé champagnes find a particular echo when they are associated with beautiful poultry. In this case, I prefer bleeding rosé, richer and more vinous" explains Patrick Borras, Chef-Sommelier of the 3 * Pierre Gagnaire restaurant.


We can also turn to a pairing with a Blanc de Noirs champagne (made only from Pinot) which will bring a beautiful structure and a vinosity able to accompany meat.

- The Cuvée Rosé from Laurent-Perrier is certainly one of the best rosé champagnes in the world! Paired with poultry, it will bring an astonishing fruity touch.

- The Blanc de Noirs Extra Brut produced by Clément Perseval, a young talent from Champagne, who has produced an intense cuvée that will be decanted a few minutes before serving it with white meat or game in order to increase its aromatic power tenfold.

- The Rosé de Saignée by Larmandier-Bernier, a cuvée of incredible power, rated 93/100 by the Parker Guide. Pierre Larmandier is one of the Top 5 of Champagne winegrowers and his vintages are always focused on a beautiful expressiveness of his Vertus terroir. A very comfortable champagne to accompany game or red meat.
