"To accompany a smoked salmon, I advise you to choose fruity champagnes with relatively little dosage" explains Patrick Borras, Chef-Sommelier of the 3 * Pierre Gagnaire restaurant. Look for Brut or Extra Brut champagnes from great houses or vintages from the Marne Valley which are distinguished by their very fruity Pinot Meunier.

We have selected 3 cuvées for this Champagne - Smoked Salmon pairing :

- The 2006 Grand Vintage from Maison Gosset, a champagne with great aromatic richness, beautiful notes of ripe fruit, and this characteristic style of Maison Gosset, focused on roundness and a silky palate.

- The Brut Réserve signed Thevenet-Delouvin, a cuvée based on a majority blend of Pinot Meunier, distinguished for its bubble, and its aromas of fresh fruit and citrus fruits which form a very nice accord with smoked salmon.

- The Or Blanc cuvée developed by Jean-Marc Sélèque, a Blanc de Blancs Extra Brut champagne that will bring a nice freshness and a certain edge that will balance the fat of the smoked salmon.
