The fish and its fine flesh require a very delicate champagne to accompany it. "I like to pair white fish with a cuvée from the Côte des Blancs. I am looking for precise, fresh champagne with a chiseled structure" explains Patrick Borras, Chef-Sommelier of the 3 * Pierre Gagnaire restaurant.

We have selected 3 cuvées for this Champagne - Fish pairing : 

- The Brut Classic from the Deutz house, a model of its kind, ranked second best Brut champagne by La Revue du Vin de France of December 2015. A cuvée whose freshness and liveliness respond wonderfully to the finesse of the flesh of the fish.

- The Blanc de Blancs by Jacques Diebolt, one of the finest winemakers of the Côte des Blancs. Its cuvée combines floral notes and a lovely freshness.

- 2008 vintage Collection Club Special produced by Didier Gimonnet, a magnificent champagne, in one of the finest vintages of the last 20 years. A cuvée that will happily match with fish in sauce.
