Pairing shrimp with fine champagne bubbles is not easy. You have to choose a cuvée which emphasizes the iodized side of the shrimp by its mineralization drawn from the chalk of Champagne, and at the same time a cuvée with enough character to strike a good balance with the power of the shrimp.

So, I recommend the Blanc de Noirs from the Jacques Chaput house, a cuvée that combines finesse and power, and which will highlight the texture and delicacy of the Carabineros shrimp.

The Rocheforts cuvée signed Etienne Calsac will bring it more finesse, more freshness, as well as a nice iodine touch, while keeping a certain power capable of pairing with shrimp.
