Cuvée Dame Noire is made from Pinot Noir grapes harvested in 2012 and bottled in 2013, although it is non-vintage. It is aged for 11 years on laths, a prolonged period that lends the wine remarkable complexity and refined structure. Vinified according to the exacting standards of Maison Chaput, this cuvée is blended at 6.5 g/L with MCR (rectified concentrated must), thus preserving its balance between freshness and roundness.
Located in the Côte des Bar region, theArrentières commune offers a terroir ofKimmeridgian clay and limestone, ideal for the intense expression of Pinot Noir. This soil, rich in marine fossils, gives the wine structure, tension and mineral complexity, while preserving the grape variety's natural generosity.
Cuvée Dame Noire has a light gold color with coppery highlights, with fine bubbles and a creamy mousse.
The nose is frank and expressive, marked by freshly pressed black grapes, with notes of citrus and red fruit.
The palate is full-bodied and fleshy, with aromas of fresh honey and butter. A freshness balances the whole for a generous, persistent finish.

By Patrick BorrasThis is a cuvée with a golden yellow color and golden reflections that add brilliance and sparkle. Its bubbles are fine and intense.
The nose of Blanc de Noirs de la maison Jacques Chaput is complex, evolving on fruity aromas, notes of dried fruit, but also a more floral touch with a slight presence of lime blossom. On the second nose, a more gourmand touch, reminiscent of honey, appears. A nose of great aromatic richness.
On the palate, the attack is surprising, combining richness, intensity and vivacity in perfect balance. The aromas are in harmony with the nose, creating a very gourmet sensation.
Blanc de Noirs Jacques Chaput is a very fine aperitif champagne, which will also resonate well with fish. I suggest serving this cuvée at a temperature of 9°C.
