The Dame Noire cuvée is made from Pinot Noir grapes harvested in 2012 and bottled in 2013, although it is not a vintage wine. It is aged for 11 years on slats, a prolonged aging process that gives the wine remarkable complexity and a refined structure. Vinified according to the demanding standards of Maison Chaput, this cuvée is dosed at 6.5 g/L with MCR (rectified concentrated must), thus maintaining its balance between freshness and roundness.
Located in the Côte des Bar, the communeof Arrentières offers aKimmeridgian clay and limestone terroir that is ideal for the intense expression of Pinot Noir. This soil, rich in marine fossils, gives the wine structure, tension, and mineral complexity, while preserving the natural generosity of the grape variety.
The Dame Noire cuvée has a light gold color with coppery highlights, crossed by very fine bubbles and topped with a creamy mousse.
The nose reveals a frank and expressive profile, marked by freshly pressed black grapes, with notes of citrus and red fruits.
On the palate, this champagne reveals a full-bodied, fleshy texture with aromas of fresh honey and butter. A lovely freshness balances the whole, leading to a generous, lingering finish.

By Patrick BorrasThis is a vintage with a golden yellow color and golden highlights that bring brightness and sparkle. Its bubbles are fine and intense.
The nose of Jacques Chaput's Blanc de Noirs is complex, evolving with fruity aromas, notes of dried fruit, but also a more floral touch with a slight hint of lime blossom. On the second nose, a more indulgent touch, reminiscent of honey, appears. It is a nose of great aromatic richness.
On the palate, the attack is surprising, combining richness, intensity and liveliness in perfect balance. Aromas in harmony with the nose bring this very indulgent sensation.
Blanc de Noirs Jacques Chaput is a beautiful champagne for aperitifs, which also pairs well with fish. I suggest serving this cuvée at a temperature of 9°C.
