The production of Bollinger Special Cuvée in half bottles
The Bollinger Special Cuvée in half-bottles is the result of a blend of 60% Pinot Noir, complemented by 25% Chardonnay and 15% Meunier. Over 85% of the grapes used come from Grands and Premiers Crus, guaranteeing exceptional quality. Only the cuvée, i.e. the first juice extracted from the pressing, is used, ensuring the purity and finesse of this iconic champagne.
This Special Cuvée benefits from extended aging of nearly three years in the cellar, well beyond the requirements of the Champagne appellation. This long rest allows the wine to develop remarkable depth and complexity. A significant portion of the blend consists of reserve wines, some of which have been aged in magnums for 7 to 15 years, enhancing the cuvée's aromatic richness. With a moderate dosage of 6 to 7 grams per liter, this champagne displays a perfect balance between freshness and roundness.
