The Cuis 1er Cru cuvée is a complex blend of six vintages complemented by reserve wines aged using a unique method. Pierre Gimonnet et Fils has chosen to age all its reserve wines in bottles (on fine lees) rather than in vats. This allows wines that are more than two years old to be incorporated, while retaining all their freshness. After aging in vats for 6 to 8 months, the wine is cold stabilized and disgorged three months before shipping. The dosage is moderate, with 5.5 to 6 g/l of sugar added, highlighting the finesse and purity of this 100% Chardonnay.

With this non-vintage Blanc de Blancs, our aim is to produce a young, very fresh Champagne without developing too much liveliness on the palate. The blend must therefore be round and balanced from the moment it is bottled. To achieve this, we take care to blend wines from the current vintage with reserve wines from several years in a very subtle way.
To succeed in this delicate and fundamental step, we have decided to keep all our reserve wines in bottles on fine lees rather than in vats, which allows us to incorporate wines that are over two years old and have retained all their freshness.
We are certainly the only winemaker in Champagne to use this blending method.
