Cuis 1er Cru is the result of a complex blend of six vintages and reserve wines carefully aged in bottles on fine lees. Pierre Gimonnet et Fils takes a unique approach in Champagne, keeping all its reserve wines in bottles rather than vats, a practice established in 1982. This allows the wines to retain all their freshness.
Vinification follows rigorous practices, with manual harvesting, fractional pressing, and temperature-controlled alcoholic fermentation. Malolactic fermentation is complete, giving the wine a silky texture. After aging in vats for 6 to 8 months, the cuvée is cold stabilized and then disgorged about three months before release. The dosage is moderate, with 5.5 to 6 g/l of sugar added, ensuring remarkable finesse and purity for this Chardonnay.
