The Brut by Pierre Gimonnet et Fils symbolizes the style and philosophy of the house. It is a Brut Blanc de Blancs characterized by its liveliness, finesse, and an airy touch.
This cuvée is made exclusively from Chardonnay grapes from the Cuis terroir, classified as Premier Cru, and blends five harvests. The terroir is located on the Côte des Blancs, undoubtedly the most renowned area in Champagne.
With this non-vintage Blanc de Blancs, our aim is to produce a young, very fresh Champagne without developing too much liveliness on the palate. The blend must therefore be round and balanced from the moment it is bottled. To achieve this, we take care to blend wines from the current vintage with reserve wines from several years in a very subtle way.
To succeed in this delicate and fundamental step, we have decided to keep all our reserve wines in bottles on fine lees rather than in vats, which allows us to incorporate wines that are over two years old and have retained all their freshness.
We are certainly the only winemaker in Champagne to use this blending method.
