Description
A lively, fine and airy Brut Blanc de Blancs, a beautiful signature cuvéePresentation of Olivier and Didier Gimonnet
With this cuvée Blanc de Blancs sans année, our challenge is to create a young, very fresh Champagne, without developing too much vivacity on the palate. The blend must therefore be round and balanced from the moment it is bottled. To achieve this, we take great care in subtly blending the wines of the year with reserve wines from several years.
To succeed in this delicate but fundamental stage, we have decided to keep all our reserve wines in bottle on fine lees rather than in vats, which enables us to incorporate wines over two years old that have retained all their freshness.
We are probably the only Champagne winemaker to use this blending method.
