The Goutorbe Bouillot estate is located in Damery, a village nestled on the hillsides bordering the Marne River, on soils that combine rich clay and limestone minerality. The Goutorbe Bouillot family cultivates 8 hectares of this terroir under HVE (High Environmental Value) and Sustainable Viticulture certification. The unique feature of the estate lies in the use of perpetual reserves in the production of some of its wines. This method ensures the continuity of the Goutorbe Bouillot style.

Among the Cuvées Réserves Perpétuelles is the Cuvée Reflets de Rivière. A fruity and fresh champagne, dominated by Pinot Meunier and enhanced by a third of a perpetual reserve started in 1980. The Cuvée Champ de Craie Extra Brut uses the same solera method for a third of its composition (with a perpetual reserve started in 2000), but this time with a 100% Chardonnay composition. An elegant and indulgent champagne with a creamy, round palate. Maison Goutorbe Bouillot also produces vintage cuvées such as the Cuvée Louise B Extra Brut 2015, perfectly balanced between power and elegance, and the Cuvée Clos des Monnaies 2012, which is both supple and delicate.
