      Description

      This Rétrospective 80-14 cuvée, created by Bastien Papleux, is a blend of the House's wines dating from 1980 to 2014, thanks to a perpetual reserve.

      Since 1980, three generations of winemakers have worked to develop this cuvée. Year after year, the old wine educates the young, and the new vintages blend with the old to produce a full-bodied and complex champagne. Bastien Papleux

      This champagne is a blend of 70% Pinot Meunier, 15% Chardonnay and 15% Pinot Noir from the village of Damery in the Marne Valley.

      The grapes are vinified in wood and there is no malolactic fermentation, fining or filtration. For this edition, 974 bottles were produced on March 24, 2016.

      The nose is open, revealing aromas of plum and other stone fruits, as well as floral notes against a backdrop of nuts (hazelnut and fresh walnut). With aeration, the bouquet reveals the complexity of the blend with spices and herbal teas.

      On the palate, the attack is supple, followed by a predominant impression of roundness. The acidity and dosage are restrained and the overall texture is full and tender. The finish is in keeping with the palate, harmonious, supple and aromatic. It fades away on a slightly astringent note and refreshing bitterness.

      This Rétrospective 80-14 cuvée from Maison Goutorbe Bouillot will pair very well with poached white poultry, terrines (veal, rabbit, pork), herb-roasted ham, or hard cheeses (Gruyère, Beaufort, Comté).
