The Champs de Craie cuvée from Goutorbe Bouillot is an elegant, indulgent champagne with a creamy, round palate.
This Blanc de Blancs is made from Chardonnays from the hillsides of the Damery terroir, where clay-limestone soils offer both richness and minerality.
Champs de Craie is based on a blend of wines from the current year and a perpetual reserve, one third of which was started in 2000. This delicate balance allows the cuvée to evolve on a fine line between the richness and density of the perpetual reserve and the youthfulness of the base year. Malolactic fermentation is not carried out in order to preserve the wine's tension.
After bottling, the wine is aged for 30 months in the cellars of the house. Its dosage of 2g/L (Extra Brut) simply highlights the nuances of the wine.
The Champs de Craie cuvée has a pale yellow color with green highlights and fine bubbles.
The nose reveals notes of jasmine, acacia, a touch of citrus and fresh brioche.
The palate is full, starting with a rounded attack. The mid-palate is creamy and generous, with a delicious flavor carried by the wine's mineral tension.
The finish is indulgent, with a hint of saltiness that opens up beautiful pairings with seafood.
