The Noir Coteaux cuvée from Goutorbe Bouillot is a champagne of great class. Its aromatic richness and roundness open the door to wonderful food pairings.
A blend of Pinot Noir (80%) and Chardonnay (20%), this cuvée highlights the richness and maturity of the grapes grown in the Coteaux de la Vallée de la Marne, particularly those from the village of Damery.
Noir Coteaux is based on a blend of wines from the current year and a perpetual reserve, one third of which was started in 2000. This carefully balanced selection allows the cuvée to evolve on a fine line between the richness and density of the perpetual reserve and the youthfulness of the base year. Malolactic fermentation is not carried out in order to maintain a high level of tension.
After bottling, the wine is aged for 36 months in the cellars of the house. Its dosage of 8g/L (Brut) adds generosity.
The Noir Coteaux Goutorbe Bouillot cuvée has a deep golden color with fine bubbles.
The nose offers aromas of white fruits, which then evolve towards a more pastry-like touch, with a hint of brioche.
The palate is full, starting with a rounded attack and gently lingering to a salty finish, which also evokes citrus fruits.
A lovely wine for fine dining, which will pair beautifully with white meat or a cheese platter.
