I have a great sympathy for Blanc de Blancs champagnes, and this Blanc des Millénaires 1995 from the Charles Heidsieck house combines everything that I like about this type of cuvées: a lot of finesse, elegance, but also great expressiveness. What is fascinating about these exceptional cuvées is their ability to defy time. This 1995 vintage does not show its 23 years at all, far from it. It retains remarkable freshness while providing that extra soul that only years in the cellar can provide. Certainly, like any very high-end champagne, moreover of 23 years of age, it is at a certain price, but frankly its quality / price ratio is excellent, and for a great occasion, it is necessary to be (very) happy !

The Champagnes Spring was held in Reims recently, a great opportunity to taste many magnificent champagnes that we are really proud to offer on Plus de Bulles. It is always a special emotion to meet one of the stars of Champagne to present his wines to you. What a crush on Frédéric Savart's L’Accomplie cuvée! A champagne full of pleasure, with a very open nose, fruity underlined by a beautiful energy. Very precise in the expression of the terroirs of the Montagne de Reims. A very nice discovery to share!

Very recently we organized a dinner at the restaurant around Sauternes and Champagne. To accompany the creations of Pierre Gagnaire, and in particular a dish around asparagus (liquorice mousserons broth, tips of green asparagus and carrot tops / Royale white asparagus with agastache, wild asparagus. Broad beans, peas , mange-tout, new onion and white bacon from Bigorre / tip of white asparagus, green tails and goat cheese from Rove seasoned with rhubarb syrup with hibiscus) I chose the vintage Les Vignes d'Autrefois signed Aurélien Laherte, a pure Pinot Meunier offering great freshness, but also a touch of vinosity which brings a nice balance and a nice density to the whole.
