I celebrated my fortieth birthday a few weeks ago, the opportunity to open some beautiful bottles. We started the aperitif with the Pure cuvée from the Pol Roger house, a house dear to my heart. It had been a long time since I tasted this cuvée and it came back to my fond memories in the best possible way. I was surprised by the beautiful vigor and intensity of this Pure cuvée, perfect for opening the taste buds. We served it with smoked salmon, a classic pairing, but terribly effective.

I have the pleasure of being able to taste vintages from my native Champagne regularly. Last week I fell in love with Maison Delamotte's Blanc de Blancs and the memory I have in my mouth is worth every talk. We are on the iconic Côte des Blancs in Grand Cru, a very chalky terroir. This cuvée is made from 100% Chardonnay. I found this champagne to be brilliantly correct in the expression of the terroirs with great finesse and beautiful chiseled acidity. We have beautiful floral aromas and a real complexity and above all a good length. A very nice surprise for this bottle tasted at the end of a light dinner !

When Antoine Paillard came to meet me at the Pierre Gagnaire restaurant, I immediately felt that his cuvées would not be devoid of personality. Antoine is passionate about his Bouzy terroir, he knows every vineyard and this is reflected in the precision of his cuvées, starting with Les Parcelles. It is a cuvée to discover because it sums up the whole of the Pierre Paillard estate. It is a fruity and elegant cuvée which I advise you to enjoy as an aperitif in a classic way or to serve with scallops or veal.
