Most of the grapes come from Grands and Premiers Crus vineyards located around Mareuil-sur-Aÿ, in the Marne Valley. This chalk and limestone terroir allows the Pinot Noir to express all its power and depth, while the Chardonnay gains finesse and minerality. This combination of soils and exposures gives rise to balanced wines that are both generous and taut.
The winemaking process combines tradition and high standards. Philipponnat produces its wines in vats and oak barrels in order to preserve both purity and aromatic complexity. A significant portion of the 2021 harvest (26.8%) did not undergo malolactic fermentation, ensuring natural acidity and enhanced aging potential. Aging on lees in the house's cool cellars at 12°C lasts a minimum of three years, more than double the legal requirement. Finally, the total absence of dosage (0 g/l) reveals the wine's most sincere expression.
The Réserve Perpétuelle cuvée reflects an ancestral Champagne practice: blending the wines of the current year with those of previous harvests. Since 1946, each vintage has enriched the reserve, creating a living memory where youth and maturity coexist. Each year, one third of the blend is set aside in oak barrels, where it slowly evolves until the next harvest. This perpetual cycle gives this cuvée remarkable richness and consistency. With its refined case, this bottle embodies the timeless elegance of the Philipponnat house.
The Philipponnat Réserve Perpétuelle Non Dosée bottle has a pale gold color with great luminosity. The effervescence is reflected in fine, persistent bubbles, a sign of delicacy.
The nose is subtly expressive, with notes of white flowers: lime blossom, vine blossom, and hawthorn. This floral impression is prolonged by a touch of minerality that underscores the purity of the whole.
On the palate, the attack is frank and straightforward. Citrus fruits dominate, bringing freshness and liveliness. The finish is long and clear, with notes of warm bread and fresh apple, characteristic of aging on lees.
The bottle with its case should be stored in a cool, dark place, ideally at 10-12°C. It should be laid down to keep the cork moist and prevent oxidation. The case provides additional protection from light, which helps to preserve the quality of the wine.
This cuvée expresses its full liveliness within 6 to 18 months of disgorging. However, it can age harmoniously for several years in the cellar, developing more complex and slightly brioche-like notes. In bottle format, we recommend storing it for 3 to 5 years to enjoy its optimal balance.
Serve this cuvée at 8°C in tulip or white wine glasses for the best aromatic expression. Thanks to its case, this bottle makes an elegant addition to a refined aperitif or a prestigious gift.
