This large format magnifies the freshness, complexity, and length of Cordon Rouge, a historic benchmark among non-vintage Bruts, now produced in a resolutely modern and precise style.
This cuvée is based on a broad blend of around 120 Champagne crus, with a high proportion of Pinot Noir, which gives it the structure and power emblematic of the Mumm style. The Chardonnays bring finesse and tension, while the Meuniers balance the whole with their fruity roundness. A significant proportion of reserve wines (up to 30%) ensures consistency of profile, vintage after vintage.
The grapes come from the hillsides of the Montagne de Reims and the Marne Valley. Pinot Noir from Verzenay and Bouzy gives density, while Chardonnays from Cramant and Avize add precision and finesse. Meunier from the more clayey hillsides brings roundness and fruity charm. This diversity of terroirs creates a complete and harmonious champagne.
Each grape variety is vinified separately before blending. Fermentation at low temperatures preserves the primary aromas. Aging on fine lees refines the texture and adds a creamy dimension. After the second fermentation, the wine is left to rest for a long time in the cellar to develop complexity and homogeneity. The Brut dosage (approximately 8 g/L) balances freshness and fullness.
Bright golden yellow with amber highlights. Abundant and fine effervescence. Clear brilliance and sustained cordon.
Initial nose of yellow fruits, peach, apricot, and pear. Notes of fresh citrus and hints of honey. With aeration, nuances of hazelnut and brioche appear.
Fresh and full-bodied attack. Balanced texture, flavors of white-fleshed fruit and a slightly spicy finish. Beautiful length with chalk and ripe apple.
The balanced style of Cordon Rouge, combining freshness and ripe fruitiness, pairs well with simple but precise dishes: seafood, tender poultry, mild cheeses. The ample bubbles and Pinot structure are a perfect match for fine, slightly buttery textures.
Store the Methuselah in a cool, dark cellar at 10–12°C, with humidity around 70%. Keep the bottle lying down to protect the cork. The large format promotes slow, even aging, ideal for extended storage.
Optimal window: 2025–2040. The early years reveal the fruity freshness and energy of Cordon Rouge. From 2028 onwards, the Methuselah will develop more complex notes of honey, hazelnut, and fresh butter, while retaining a lemony tension. After 2035, the texture will become creamier and the bubbles delicately integrated, offering a rare gastronomic profile for a non-vintage Brut.
Serve at 9–10°C in slender tulip glasses. Open slowly and pour carefully to preserve the mousse. A large bucket with 2/3 water and 1/3 ice will help maintain a stable temperature. This grandiose format deserves ceremonial, slow and precise service.
