The production of Drappier's Brut Nature Sans Soufre champagne
Drappier's Brut Nature Sans Soufre is made exclusively from Pinot Noir grapes grown on the chalky Kimmeridgian soils of Urville, in the Côte des Bar. This exceptional terroir gives the champagne a mineral and elegant structure. The grapes are pressed in a plate press at low pressure to obtain a first pressing of great finesse.
This champagne is unique in that it is vinified without the addition of sulfur, ensuring a pure and natural expression of Pinot Noir. After natural settling, vinification is carried out in stainless steel vats. Malolactic fermentation is carried out with organic yeasts from the estate. The wine is then aged in bottles for 24 months in the Drappier cellars. The total absence of dosage and added sulfur makes this a Brut Nature of rare authenticity.
