Production of Ayala Brut Majeur champagne
Brut Majeur is made from a refined blend of Champagne grape varieties, offering a harmonious and balanced expression:
- 50 to 55% Chardonnay: mainly from the Côte des Blancs, it brings finesse, minerality and great freshness.
- 30 to 40% Pinot Noir: from the terroirs of the Montagne de Reims and the Vallée de la Marne, it gives structure and elegance.
- 10 to 15% Meunier: grown in the Sézannais, Vitryat and Côte des Bar regions, it rounds out the blend and adds a fruity, indulgent touch.
This champagne is the result of high-precision micro-vinification carried out in 120 stainless steel vats, allowing each cru, each grape variety and each year to be vinified separately. This approach guarantees a faithful expression of the terroir and great aromatic purity.
The blend is composed of wines from 70 selected crus, reflecting the diversity of the Champagne terroirs. To preserve its consistency and complexity, Brut Majeur includes at least 40% reserve wines, the oldest of which dates back to 2016.
After blending, the cuvée is aged on lees for a minimum of three years, well beyond the appellation standards, in order to develop a silkier texture and incomparable aromatic richness.
