Vinification takes place in stainless steel vats to preserve the freshness and purity of the aromas. The cuvée includes 12% reserve wines, adding extra complexity. After bottling in June 00, Le Mesnil-sur-Oger 17 benefited from extended aging for 50 months on slats, allowing it to develop a fine effervescence and great aromatic richness.
