This Brut Nature cuvée from Maison Rémi Leroy is based on the same blend as the Extra-Brut, with two differences: it benefits from a special bottle aging process, where each bottle is turned by hand to resuspend the lees, and extended aging on slats.
This Brut Nature is composed of a dominant Pinot Noir (60%), one third Chardonnay (35%) and a touch of Meunier (5%). These grapes come from Meurville in the Côte des Bar.
The vineyard, which is around 20 years old, is located on hillsides, but the distinctive feature of the Meurville cru is its very poor clay-limestone soils with a thin layer of topsoil. On such soils, where the vines naturally struggle to grow, Rémy's viticultural practices enable him to produce fruit and juices with remarkable character.
The nose is delicate and airy, revealing notes of spices, white fruit, and brioche.
The palate is fresh, structured, balanced, and creamy. The finish is tense and persistent.
To accompany this Brut Nature, Maison Rémi Leroy recommends pairing it with seared scallops on a leek and Champagne curry fondue or guinea fowl fillets stuffed with onion compote, orange-infused guinea fowl jus, and spaetzle with fromage blanc and chives.
