The 2018 Oenophile Non Dosé cuvée, crafted by Didier and Olivier Gimonnet, highlights the grandeur and complexity of the great Chardonnays of the Côte des Blancs. This cuvée is always a complex wine with perfect maturity.
This non-dosage cuvée bucks the current trend, having been created in 1985. Maison Pierre Gimonnet was a pioneer in Brut Nature and is now marketing its 20th "non-dosage" vintage. Only the very best vintages are selected for this cuvée.
This Blanc de Blancs cuvée is a blend of 45% Chardonnay from Cramant Grand Cru, 30% from Chouilly Grand Cru, 3% from Oger Grand Cru, and 22% from Cuis 1er Cru.
This cuvée is vinified and aged in stainless steel vats to preserve the purity of the terroir, and malolactic fermentation is carried out to give the wine roundness and suppleness. The bottles have benefited from four years of extended aging in the cellars of the House, and the wine is non-dosé to preserve all its freshness and purity.
This champagne has a pale golden color with bright highlights. The bubbles are fine and elegant, forming a persistent cordon that cascades up the glass.
The nose opens with a complex and seductive aromatic palette. The first notes are those of white-fleshed fruits such as Granny Smith apple and juicy pear, complemented by aromas of fresh lemon zest. Gradually, mineral and chalky nuances develop, reminiscent of the Côte des Blancs terroir.
On the palate, the Cuvée Oenophile Non Dosé 2018 offers a lively and chiseled taste experience. The purity of the Chardonnay is fully expressed, with a vibrant tension that highlights the flavors of fresh fruit, notably crisp green apple and juicy white peach. The characteristic minerality of the terroir is evident in chalky and salty notes, adding extra depth to the tasting experience. The structure is delicately creamy, reflecting well-controlled aging on the lees.
