The Cuvée Oenophile Non Dosé 2017 crafted by Didier and Olivier Gimonnet is a champagne that will delight Blanc de Blancs lovers. It's a cuvée whose elaboration underscores the grandeur and complexity of the Grands Chardonnays of the Côte des Blancs. This cuvée is always a complex, perfectly mature wine.
This non-dosed cuvée does not respond to the current trend, since it was created in 1985. Maison Pierre Gimonnet was a pioneer in Brut Nature and is now marketing its 20th "non dosé" vintage. Only the very best vintages are chosen for this cuvée.
This Cuvée Blanc de Blancs is a blend of 23.5% Chardonnay from Cramant Grand Cru, 43.6% from Chouilly Grand Cru, 4.8% from Oger Grand Cru, 5.2% from Vertus and 21.4% from Cuis 1er Cru.
This cuvée is vinified and aged in stainless steel tanks to preserve the purity of the terroir, and malolactic fermentation is carried out to give the wine roundness and suppleness. The bottles are aged for a further 4 years in the house cellars, and the wine is not dosed to preserve all its freshness and purity.
This Cuvée Œnophile Non Dosé 2017 has a beautiful gold color, with slightly green highlights, and its effervescence is very fine and lively.
The nose reveals fragrances typical of the great Blanc de Blancs, with floral notes and a touch of citrus, followed by aromas of sweet spices and custard.
On the palate, this is a clean, lively cuvée, with both intensity and complexity. A mineral cuvée that marries perfectly with the iodized flavor of seafood.
3,000 bottles of this cuvée have been bottled.
