This vessel, by allowing more generous contact between wine and wood, develops toasty notes that give the cuvée its structure. Malolactic fermentation was carried through to completion: it softens the wine's acidity and gives it a velvety mouthfeel, rather than a sharper profile.
No sugar was added at dosage: at 0 g/L, this cuvée belongs to the Brut Nature category, the driest and most direct style, which lets the grape express itself without any added roundness. At Louise Brison, this choice reflects a commitment to purity, where every stage of winemaking remains in service of the fruit and the work of the wood, with no sweetness used to mask or soften the final result on the palate.
In 2021, the Côte des Bar saw a spring marked by April frosts, followed by a wet June that put the vines to the test with mildew (a vine disease linked to humidity). These setbacks reduced yields, concentrating the Pinot Noir berries, which were then able to ripen under kinder skies during the harvest, with mild days and cool nights. This temperature swing allowed for a slow ripening, preserving a lovely freshness.
Every vintage is a genuine source of inspiration, a truly unique composition, a melody that plays with balance and time. The 2021 vintage lends this cuvée a taut freshness and a saline precision that offer nuance, emotion and singular pleasure.
The colour takes on a golden hue with coppery glints, a brilliance further burnished by the time spent in barrel. The bead is fine, carried by a persistent mousse that plays across the surface of the glass.
The nose opens with bursts of ripe red fruit, quickly joined by spiced and oaky notes from the barrel. Deeper still, pastry-like touches emerge, a brioche and almond richness patiently shaped by extended lees ageing.
The palate opens with a vinous, dense and enveloping texture, rounded by full malolactic fermentation while retaining a lively mineral tension. The texture turns ample, almost nourishing, never losing its freshness thanks to the absence of dosage, which lets the fruit express itself in its purest form. The finish lingers, saline and spiced, with remarkable length.

Lay it down horizontally: this keeps the cork moistened by the wine and preserves its seal over time. Choose a cellar with a stable temperature, ideally between 10 and 14°C, as temperature swings tire the wine far more than a temperature that is slightly low or high but constant. Good humidity levels (around 70-80%) prevent the cork from drying out. Keep it away from light, especially direct sunlight: this is what's known as lightstrike, a fault of smell and taste caused by prolonged exposure to light. Finally, avoid vibrations, which disturb the wine over time.
