The 2016 Meuniers des Moines cuvée from Louis Nicaise is an astonishing champagne that showcases both Pinot Meunier and the Hautvillers terroir, the birthplace of champagne.
This cuvée is made exclusively from Pinot Meunier grapes grown on three different types of plots. The first is on limestone soil, the second on millstone and the third on clay. These three types of soil in the Hautvillers terroir each bring a particular style to the Meunier.
Hautvillers is considered the birthplace of champagne, as it was in the abbey located in the village that Abbot Pierre Pérignon perfected the method of making champagne.
The 2016 Meuniers des Moines cuvée, produced by Clément Préaux and Laure Nicaise, is vinified half in 300-liter oak barrels made from oak from the Hautvillers forest. The second half of the cuvée is aged in vats on lees.
Malolactic fermentation is blocked for half of the wines in order to preserve tension. The dosage is light, around 5g per liter.
