Cuvée Meuniers des Moines 2015 from Maison Louis Nicaise is a stunning champagne that highlights both Pinot Meunier and the terroir of Hautvillers, the birthplace of champagne.
This cuvée is made exclusively from Pinot Meunier from 3 different types of plot. The first on limestone, the second on millstone and the last on clay. These 3 types of soil in the Hautvillers terroir each give a particular style to the Meunier.
Hautvillers is considered to be the cradle of champagne: it was in the abbey located in the village that Abbé Pierre Pérignon perfected the champagne vinification method.
The Meuniers des Moines 2015 cuvée, created by Clément Préaux and Laure Nicaise, is half vinified in 300-liter oak barrels from Hautvillers forest. The second half of the cuvée is aged in vats, on lees.
Malolactic fermentation is blocked for half the wines, to preserve tension. Dosage is light, around 5g per liter.
