Laure and Clément Préaux's cuvée Extra Brut 2016 is a gourmet champagne.
2016 was a vintage of contrasts in Champagne, with a mild, sunny autumn followed by a rainy, cool spring. Fortunately, a hot, dry summer enabled the grapes to reach excellent ripeness. It's a vintage that combines tension and delicacy.
This champagne is a blend of 70% Chardonnay on limestone soil, which brings liveliness and tension, and 30% Pinot Noir on stony soil, which gives structure and fruit.
The grapes are vinified and aged 90% in stainless steel tanks and 10% in barrels. Malolactic fermentation has been partially completed. After bottling, which takes place in April 2017, the bottles will benefit from 6 years' aging in the Maison's cellars.
This champagne is offered for tasting with an Extra Brut dosage of 3.5 g/L, giving the cuvée its name.
