Champagne Jestin is a very young house founded in 2006 by Hervé Jestin, a pioneer and world-renowned expert in organic and biodynamic viticulture.
This 2009 Vintage is the fourth vintage from the Jestin house. It is a blend of 25% Pinot Meunier from Cumières, from the George Laval estate, 50% Chardonnay from Trépail, from the David Léclapart estate, and 25% Pinot Noir from Bouzy, from the Benoît Lahaye estate. The grapes are harvested on fruit days. This unique sourcing is probably the best in organic viticulture in Champagne.
With these extraordinary grapes, Hervé Jestin has produced a cuvée of remarkable precision. Fermented and aged in French oak barrels from the Allier region. Malolactic fermentation takes place during the 10-month aging period on lees.
In July 2010, after the vines had flowered and after the summer solstice, the wine was bottled.
All stages of vine cultivation and winemaking for this Champagne respect the natural cycles of nature and the main influences of the planets in the solar system.
The inner planets of the solar system have a very strong influence on alcoholic fermentation, while from March onwards it is the outer planets that influence malolactic fermentation.
All my work as a winemaker consists of learning to listen to the wine and working with intelligence and an awareness of nature.
For me, it's about getting in tune with my wine so that I can give it the natural elements it needs for its development at the right time. This may involve exposing the wine to daylight or morning air at certain times of the year (particularly during the solstices and equinoxes), or adding the energy of a plant or mineral.
My Champagnes are wines of great complexity and emotional richness. It is sometimes necessary to wait several minutes for them to express all their qualities. The choice of glass is important; I prefer to use a Champagne or wine glass (Jamesse, Riedel, or Lehman).
These Champagnes are also gastronomic Champagnes, they are Champagnes to be shared.
