The 2008 Vintage from Hervé Jestin is a blend of 50% Chardonnay from Trépail, 25% Pinot Meunier from the Cumières terroir, and 25% Pinot Noir grown in Bouzy. These grapes come from exceptional estates committed to rigorous organic viticulture: David Léclapart, George Laval, and Benoît Lahaye. Harvested on fruit days, these grapes embody the excellence and purity of the great Champagne terroirs.
Hervé Jestin uses a vinification method based on biodynamic practices. Each grape variety is fermented and aged separately in French oak barrels from the Allier region for 10 months. During this period, malolactic fermentation is carried out with care, influenced by natural rhythms and lunar cycles. Once aging is complete, the wine is bottled in July, after flowering and the summer solstice, a key step in ensuring harmony and aromatic depth.
The 2008 vintage has a bright golden color, crossed by a fine and persistent effervescence.
On the nose, this champagne reveals great complexity with aromas of dried fruit, candied citrus, honey, and toasted notes. Mineral and floral notes round out this refined bouquet.
On the palate, the attack is lively and precise, carried by a beautiful mineral tension. The mid-palate reveals a silky texture, balanced by flavors of yellow fruit, brioche, and a hint of saltiness. The finish is long and elegant, marked by chalky notes and lingering freshness.

To preserve all the richness of the 2008 Vintage, it is recommended to store the bottles horizontally in a dark, cool cellar at a constant temperature of 62-68°F. This champagne has impressive aging potential and can evolve favorably for another 15 years.

The inner planets of the solar system have a very strong influence on alcoholic fermentation, while from March onwards it is the outer planets that influence malolactic fermentation.
All my work as a winemaker consists of learning to listen to the wine and working with intelligence and an awareness of nature.
For me, it's about getting in tune with my wine so that I can give it the natural elements it needs for its development at the right time. This may involve exposing the wine to daylight or morning air at certain times of the year (particularly during the solstices and equinoxes), or adding the energy of a plant or mineral.
My Champagnes are wines of great complexity and emotional richness. It is sometimes necessary to wait several minutes for them to express all their qualities. The choice of glass is important; I prefer to use a Champagne or wine glass (Jamesse, Riedel, or Lehman).
These Champagnes are also gastronomic Champagnes, they are Champagnes to be shared.
