The production of Emeline De Sloovere Patience Champagne

With Patience, Emeline De Sloovere seeks to reveal the most precise and accomplished dimension of her terroirs. The blend combines the tension of Chardonnay and the generosity of Meunier in a chiseled, silky, and delicately aromatic style. The presence of 20% perpetual reserve brings complexity and stylistic continuity.

  • Meunier (25%) brings fruitiness, roundness, and aromatic depth.

The terroir

The Patience cuvée comes from the southern slopes of Épernay, located between 120 and 350 meters above sea level, on clay-limestone soils typical of the area. This terroir gives the wines freshness, verticality, and an elegant saline structure. The vines are cultivated using regenerative viticulture methods: grass cover, compost, and natural plant-based treatments. This approach highlights the vitality of the soil and the aromatic precision of the fruit.

Vinification

Vinification is guided by a minimalist and respectful approach. Fermentation and aging take place in concrete vats and small stainless steel vats for 10 months, with prolonged aging on fine lees to bring texture and complexity. Patience then benefits from 48 months of aging on lees in the bottle, followed by a minimum of 6 months of rest after disgorging. The Extra Brut dosage (2 g/L) highlights the purity of the wine and the transparency of the terroir. The use of sulfur is limited (< 35 mg/L).

    Pale gold with luminous highlights. Fine, delicate bubbles, indicative of long aging.

  • Nose

    Fine and subtle: white fruits, citrus, white flowers, and light brioche notes. A hint of minerality comes through.

  • Palate

    Lively and elegant attack. Silky texture supported by precise acidity. The wine lingers on aromas of fresh fruit, delicate flowers, and a long, fresh, and persistent finish.

Storage and serving

How to store this cuvée

Patience should be stored at 10–12°C in a dark, stable cellar with humidity of around 70%. Thanks to its long aging and silky structure, it will continue to gain complexity for 6 to 10 years, gradually developing notes of dried fruit and brioche.

Aging potential

Aging potential: 8 to 12 years. In its early years, the cuvée expresses its fruity brilliance and chalky precision. Between 5 and 8 years, it gains in fullness and reveals buttery and floral notes. At the end of its aging period, it develops a harmonious maturity and a more caressing texture.

How to serve Patience

We recommend serving Patience at 10–14°C in a tulip glass or a thin universal glass. A little aeration will reveal the floral and mineral complexity of this elegant cuvée.
