Champagne Emeline De Sloovere's2019 Les Cochonnes No. 4 is a micro-cuvée of Pinot Meunier, produced in extremely limited quantities. A rare Blanc de Noirs, born from an in-depth exploration of the potential of Meunier on the southern slopes of Épernay. A champagne with character, precision, long aging, and remarkable depth.
With this experimental cuvée, Emeline De Sloovere seeks to reveal a new and more intense expression of Meunier. The grapes come from a small plot on the southern slopes of Épernay. This single-vineyard approach, combined with minimal use of sulfur, allows the wine to gain depth and aromatic precision.
Les Cochonnes comes from an area of the southern slopes of Épernay located between 120 and 350 meters above sea level, on clay-limestone soils typical of the massif. This terroir produces ripe, expressive Meuniers with a beautiful mineral structure. The vineyards are cultivated using a regenerative approach: grass-covered soils, natural composts, plant-based treatments, respecting living organisms and the balance of the soil.
Vinification is carried out using a minimalist approach. The juices ferment and age in five-wine barrels for 10 months on fine lees, in order to gain depth and complexity without excessive woodiness. Aging continues for 90 months on lees in the bottle, resulting in a silky texture and great aromatic precision. The cuvée is undosed (Brut Nature (0 g/L)), allowing the pure and direct character of Meunier to express itself.
Bright gold with slightly coppery highlights. Fine, regular bubbles, a sign of long aging.
Expressive and precise: fresh fruit, white flowers, delicate spices, with a subtle mineral dimension. The Meunier reveals an elegant and pure profile.
Silky and balanced. Straightforward freshness, aromas of white fruits and flowers, mineral notes and a long, persistent finish. A finely crafted Meunier, full-bodied and perfectly balanced.
A cuvée with character, ideal for fine dining, combining delicate textures and refined aromas.
Store N°4 Les Cochonnes 2019 at 10–12°C in a dark, stable cellar with 70% humidity. Thanks to its long aging and full-bodied structure, this vintage will gain complexity over 8 to 12 years, developing notes of dried fruit, sweet spices, and beeswax.
Ageing potential: 10 to 14 years. In the early years, the wine expresses its freshness and fruity precision. Between 5 and 10 years, it develops a fuller texture and pastry nuances. At the end of its ageing period, it gains noble maturity while retaining a clear mineral structure.
We recommend serving this cuvée at 10–14°C in a tulip glass or a thin universal glass. A little aeration reveals the depth of the Meunier and its refined texture.
