The production of Trop M’en Faut! Drappier

The name "Trop M'en Faut!" is a play on words on "Fromenteau" (the Champagne name for Pinot Gris), which could be translated as "So good that I'll never have too much!"

The Trop M’en Faut! cuvée is made from 100% Fromenteau – the Champagne name for Pinot Gris, which was once very common in the Aube region. This copper-skinned grape variety produces a golden juice with hints of yellow fruit, which Drappier brings to the fore in this exceptional cuvée. After an experimental phase in 2015, this cuvée is the result of a blend of the 2019 and 2020 harvests, grown on the Kimmeridgian limestone soil of Urville, in the Aube region. The vines, which are organically farmed and plowed by horse, benefit from the minerality of this terroir while revealing the almost exotic roundness characteristic of Fromenteau.

Aged in 600-liter local oak demi-muids for eight months, this cuvée benefits from natural techniques without chaptalization, filtration, or clarification to preserve the purity of the aromas. Malolactic fermentation takes place naturally, with little sulfur added. Aged for three years on slats, this Brut is unblended, offering an authentic expression of Fromenteau and its Champagne terroir.
