There are three stages in the development of a Dom Pérignon vintage, three periods that reveal the characteristics of a cuvée without ever compromising its personality. First comes the first fullness, which reveals itself after a minimum of seven years of maturation on lees, or longer depending on the vintage. The second stage, P2, is the time of energy: after a minimum of twelve years of maturation on lees, the intensity of the wine is magnified. The third stage comes after a minimum of 20 years of aging, and is characterized by complexity and depth.
Dom Pérignon Vintage 2006 Plénitude 2 is a blend of Pinot Noir and Chardonnay from the best vineyards in Champagne. The 2006 vintage was marked by contrasting weather conditions, combining scorching heat in July and heavy rain in August. These climatic hazards produced grapes of exceptional maturity, expressing all the richness and complexity of the Champagne terroir.
The Plénitude 2 cuvée benefits from 15 years of extended aging in the Dom Pérignon cellars, reaching a new dimension of depth and complexity. The dosage is meticulously adjusted to preserve the authenticity of the aromas and terroirs and highlight the purity and elegance characteristic of this vintage.
