The production of Dom Pérignon Vintage 2006 Plénitude 2
Dom Pérignon vintages have three lives, three stages during which their aromas evolve. These three periods reveal the characteristics of a cuvée without ever betraying its personality. First comes the first fullness, which reveals itself after a minimum of seven years of maturation on lees, or longer depending on the vintage. The second stage, P2, is the time of energy: after a minimum of twelve years of maturation on lees, the intensity of the wine is magnified. The third stage comes after a minimum of 20 years of aging, and is one of complexity and depth.
The 2006 vintage of Dom Pérignon is a faithful reflection of the Champagne climate that year. The ripening cycle was influenced by a contrasting season: a scorching July followed by a cool, wet August. However, it was September that proved decisive for this vintage, offering almost summer-like conditions. The grapes ripened exceptionally well, and the harvest, which began on September 11, lasted three weeks to allow for careful selection of the best grapes.
This champagne is composed of Dom Pérignon's emblematic blend, carefully combining Pinot Noir and Chardonnay. The cuvée was aged in the cellar for nearly 17 years, from 2006 to 2023, reaching its second peak, which reveals all its complexity and depth. The vinification, orchestrated with unique precision, aims to preserve the very essence of the vintage while allowing the champagne to express its maturity. The dosage remains faithful to the spirit of the house: balance and finesse to highlight the character of the wine.
