The 2013 Blanc de Blancs from Maison Bruno Paillard is a joyful, lively wine. None of its components dominates, allowing it to open up and blossom perfectly, fully. To illustrate this wine, artist Anne Commet was commissioned to create a piece on the theme of "Freedom."
The 2013 vintage is marked by a sensation of crystal-clear freshness, which gradually reveals the fullness of a generous summer.
This cuvée is made exclusively from the first pressing, the purest, of Chardonnay Grands Crus. These grapes are harvested in the heart of the Côte des Blancs in Oger and Le Mesnil-sur-Oger, with 25% of the blend vinified in small old oak barrels. The wine is aged for seven years in the cellar, with at least 12 to 18 months of rest after disgorging, to allow this champagne to reach such a high level of expression. Its low dosage of 4.5 g/L also contributes to the pure and elegant character of this vintage champagne.
This 2013 vintage has a bright pale gold color, dotted with fine, chiseled bubbles.
The nose is fresh, crisp and full. It reveals notes of cold ash and hawthorn, followed by aromas of white peach, lemon verbena and fresh almond.
On the palate, the attack is lively, precise, crystalline and limpid, diffusing a magnificent salinity. The wine then fills the mouth with a texture that is both full and mellow. An almost minty freshness is revealed, accompanied as the wine opens up by a slightly fleshy fruitiness, hinting at a development towards roasted hazelnuts.
This 2013 Blanc de Blancs from Maison Bruno Paillard calls for a texture such as monkfish or prawns.
