Julien and Julie Boonen are classified as Récoltant-Manipulant winemakers, meaning they produce their champagne exclusively from grapes grown on their own vineyards. As independent winemakers, they adhere to the principles of High Environmental Value certification. This commitment promotes local biodiversity across all their vineyards and limits the use of vineyard inputs.
The vineyards are rooted on the left bank of the Marne Valley. The estate is concentrated on the steep slopes of the Cirque de Festigny, in the heart of the Flagot Valley, classified as an "Autre Cru" within the appellation. This natural amphitheater shields the plots from cold drafts and ensures prolonged sun exposure, which is ideal for the full ripening of the grapes.
The subsoil consists of a clay-loam matrix resting on a deep limestone base. The surface clay acts as a water reservoir during summer droughts, while the limestone effectively drains excess water in the fall. This configuration extends the Meunier’s growing cycle and imparts a persistent salinity to the musts, which is perceptible on tasting.
Cellar master Julien Boonen oversees the blending of this limited-edition cuvée. The blend consists of 50% Meunier and 50% Chardonnay from the village of Festigny.
Gentle pressing extracts the juice, which flows by gravity into temperature-controlled stainless steel tanks. Alcoholic fermentation begins in these inert containers under strict temperature control.
Malolactic fermentation is carried out in full to round out the natural acidity of the clear wines. No aging in oak is used to preserve the fruit’s original vibrancy.
The wine then undergoes 24 months of aging on the lees in bottles stored horizontally on racks. The addition of a fine dosage sets the sugar content at 4.5 g/L, classifying this champagne as Extra-Brut.
The Le Zèbre cuvée is part of Boonen Champagne’s One Shot range. This range features unique releases from a single base vintage. It showcases micro-vinification experiments led by Julien Boonen. The goal is to test novel parcel combinations without seeking to replicate the recipe.
The color of the Le Zèbre cuvée is a pale gold with silvery highlights. The effervescence produces a stream of fine, lively bubbles, forming a persistent and even cord on the surface of the glass.
The initial nose opens cleanly with aromas of lemon and freshly squeezed citrus, followed by rich notes of white-fleshed fruits. Aeration reveals subtle toasty notes of brioche.
The attack on the palate is clean and lively. The mid-palate unfolds with flavors of fresh marzipan and mirabelle plum. The finish lingers on a crisp, refreshing framework, underscored by a hint of saltiness.
