To create this "all-purpose" wine, Maison Boonen relies on a precise winemaking process aimed at preserving the fruit’s vibrancy and the bubbles’ suppleness.
The vineyard is situated in the heart of the Cirque de Festigny, on the left bank of the Marne Valley (Flagot Valley). This area is renowned for its "Great Meunier Terroirs." The vines draw their character from a mosaic of clay-limestone and sandy-siliceous soils. This unique blend gives the wine a structure that is both full-bodied and light, marked by a delicate minerality and striking contrasts in texture.
The color is bright and inviting, enlivened by strings of bubbles of great finesse.
The nose is an explosion of freshness. It opens with aromas of crisp red fruits and vine peaches, complemented by delicate toasty notes from aging on the lees.
The attack is broad, rich, and very savory. The palate is seduced by a creamy effervescence carrying intense fruity flavors. The finish is long and mouth-watering, lingering on a lovely note of lemon zest that adds a final touch of vibrancy.
The CPTS vintage is a wine for immediate enjoyment, designed to be enjoyed while fresh:
