      Description

Boonen Champagne's CPTS Rosé is the lively, fruit-forward version of the famous "Ça Passe Tout Seul."

Crafted with the same spirit of conviviality and technical precision, this Rosé version showcases the rich, luscious character of Pinot Meunier. It is an unpretentious champagne, designed for those seeking body, crispness, and exceptional drinkability, whether for a festive aperitif or a meal with friends.

The production of the CPTS Rosé cuvée

This blended rosé derives its color and fruity character from a meticulous red wine vinification process carried out on the estate’s old Pinot Meunier vines.

      Indulgence and Precision

      • Blend: A combination of the three Champagne grape varieties, complemented by the addition of Pinot Meunier red wine for structure and fruit.
      • Vinification: Processed in temperature-controlled tanks to preserve the freshness of the primary aromas.
      • Malolactic Fermentation: Fully completed to ensure a supple texture and a full-bodied attack.
      • Aging: Aged for 24 months in the cellar to harmonize the effervescence and body.
      • Dosage: Brut (6 g/l), a perfect balance to support the crispness of the red fruit without heaviness.

      The terroir: The Festigny setting

The grapes come from the Cirque de Festigny, a natural amphitheater located in the Flagot Valley (left bank of the Marne Valley). The soil, composed of a mixture of clay-limestone and sandy-siliceous material, is an ideal terroir for Meunier. This unique geology gives the champagne a vinous foundation while retaining great lightness and a hint of salty minerality on the finish.

Tasting of the CPTS Rosé Champagne Boonen

      • Appearance

The color is luminous, a vibrant salmon pink, enlivened by fine, lively bubbles.

      • Nose

The nose is a veritable basket of wild berries. Dominated by raspberry and redcurrant, it evolves into softer notes of fine pastries.

      • Palate

On the palate, the experience is immediate with a generous, fruity attack. Delicious notes of crushed strawberry coat the palate. The whole is supported by a creamy effervescence and concludes with a savory, refreshing finish.

      Storage and Serving Tips

      Aging Potential

CPTS Rosé is a vibrant cuvée, designed to be enjoyed while the fruit is still young:

      • Now: To enjoy the aromatic intensity of crushed strawberries.
      • 1 to 2 years: The wine will develop notes of stewed fruit while remaining very savory.

      Serving Recommendations

Serve this rosé between 9°C and 11°C. Its structured, full-bodied character allows it to hold its own against savory and spicy dishes, while remaining a delight as an aperitif.

This is a blended rosé: a small amount of still red wine (made from Pinot Meunier) is added to the white wine before bottling.

The structure imparted by the red wine vinification of the Meunier grape helps highlight the smoky and caramelized flavors of grilled meats, while adding a welcome touch of freshness.

Yes, its "cirque"-like topography protects the vines and promotes optimal ripening of the Meunier grapes, which explains that characteristic "crushed strawberry" flavor.
