The Blanc de Blancs from Maison Billecart-Salmon, presented here in magnum format, is made from Chardonnay grapes from the five grands crus of the Côte des Blancs: Avize, Chouilly, Cramant, Mesnil-sur-Oger, and Oger.
Its composition, the result of a blend of two different years, reveals all the unique characteristics of Chardonnay.
Building on its traditions, such as vinification in grand cru barrels, the house ages its bottles in an extensive network of chalk cellars dating from the 17th and 19th centuries. The temperature is kept constant at around 54°F, allowing the production of fine bubbles.
Billecart-Salmon's Blanc de Blancs has a fine mousse with delicate bubbles that elegantly complement the golden highlights of the color.
Its nose surprises with aromas of almond mixed with white fruit.
It is complex and powerful on the palate, with a pleasant vinosity. The finish is fresh and elegant.
