The 2015 Cuvée Paradis from Maison Alfred Gratien is a champagne that pairs perfectly with fish and shellfish.
This champagne is a blend of 65% Chardonnay and 35% Pinot Noir from the Premiers and Grands Crus of the Montagne de Reims and the Côte des Blancs. The grapes are vinified and aged in small 228-liter oak barrels. Malolactic fermentation is blocked in order to respect the nature of the grapes and the personality of the terroir.
This cuvée has a very bright golden yellow color and its extremely fine effervescence rises quickly to the surface, crowning the wine with a very elegant collar of bubbles.
The nose is intense and surprising, with aromas of pineapple, yellow peach, mimosa, vanilla, coconut, and cashew nut: an exotic and highly complex expression. It is a stunning, rare, and still young nose, with great originality.
The attack on the palate is lively and full-bodied. The structure is assertive, with an elegant salty touch. The finish offers a warm, astringent note, ending with an intense chalky and salty sensation. Overall, this cuvée suggests richness and great potential.
The salinity and silky texture of this 2015 Paradis cuvée from Maison Alfred Gratien will pair beautifully with dense fish or shellfish such as lobster, langoustine, cod, monkfish or John Dory, accompanied by tangy sauces and exotic fruits.
