The production of Mont Martin 1er Cru 2020 Nicolas Maillart champagne

True to his desire to reveal the truth of the terroirs, Nicolas Maillart has created a champagne of great aromatic intensity.

Vinification

  • Vinification and aging in oak barrels to enrich the complexity and add a slight woody touch.
  • Aged on lees for 8 months, developing volume and depth.
  • No malolactic fermentation is carried out in order to preserve the wine's tension and energy.
  • Brut Nature dosage (0 g/L), revealing the wine in its most authentic purity.

The 2020 vintage

The year 2020 in Champagne was marked by a sunny, dry summer, resulting in grapes of exceptional ripeness. The Pinot Meunier from Villers-Allerand offered generous, concentrated fruit with remarkable natural balance. The vintage produces expressive wines with a saline tension and interesting aging potential.

Tasting notes

  • Color

The color is light golden yellow with luminous highlights. The effervescence is fine and regular.

  • Nose

The nose opens with aromas of ripe fruit —pear, yellow apple, mirabelle plum—accompanied by more complex notes of dried fruit, sweet spices, and a slightly toasted touch from aging in wood.

  • Palate

The palate is full-bodied, vinous, and expressive. The fruitiness of Pinot Meunier dominates, supported by a mineral freshness. The finish is long and salty.

Food pairing suggestions

Appetizer bites
  • Wild mushroom puff pastries

  • Veal sweetbreads with morel mushrooms
  • Roast free-range chicken with fresh herbs
  • Grilled sea bream fillet and seasonal vegetables
Desserts

  • Dried fruit crumble
  • Revisited lemon tart

Storage and serving tips

Store this champagne

The 2020 Mont Martin cuvée should be stored horizontally in a cool, dark cellar, between 10 and 12°C, with a stable humidity of around 70%.

Aging potential

It can be enjoyed now for its vibrant freshness and fruitiness, but can also be stored for 5 to 8 years to develop more evolved notes of dried fruit and spices.

Serving suggestions

Serve this champagne at a temperature of 9 to 10°C in a large tulip glass or white wine glass. A few minutes of aeration in the glass will bring out its aromatic richness.
