Cuvée Harmonie 2009 is a champagne with a gourmand nose, reminiscent of ripe fruit and honey, and a mouthful of freshness.
Made from a blend of 50% Pinot Meunieur and 50% Pinot Noir, it is a Blanc de Noirs champagne with an Extra Brut dosage (2g/L organic cane sugar).
Each grape variety is harvested individually at perfect ripeness (on different dates), and begins fermentation separately. When the sugars have finished, the 2 wines are blended to merge the 2 grape varieties and allow the terroir to emerge in all its dimension. Dosage 2 g/l in a solar year...
Each grape variety is vinified with its own natural yeasts, and malolactic fermentation is spontaneous. The wine develops its identity and personality with the rhythm of the seasons, at the natural temperature of the cellar. Clarification is achieved by racking.
Since 2005, Franck Pascal's energetic approach has filled a void in the winery, just as biodynamics filled a void in the vineyard.
