This champagne derives its complexity from an exceptional terroir: vines averaging 40 years of age, planted on Rendzina soils over chalk in Vertus (Premier Cru). The viticulture is environmentally friendly, prioritizing soil life.
The uniqueness of this rosé lies in its three-part composition:
Only the first pressings (the "Cuvée") are used. The wines spend seven months on lees before bottling, with minimal use of sulfur. Bottle aging lasts a minimum of four years in the House's 19th-century cellars. The dosage is Extra-Brut (3 to 4 g/L), made with grape sugar, a signature of the house that brings natural roundness.
Although classified as "MV" (Multi Vintage), this blend is built around a backbone from the 2017 vintage. This year serves as the base, enriched by reserve wines stored in oak barrels, which bring the patina, depth, and "Vinothèque" style sought after by the Fourny brothers.
The color is delicate, with bright salmon highlights, reflecting the measured contribution of Pinot Noir vinified as a red wine.
The nose is expressive and distinctive, leaning towards notesof blood orange and citrus zest, underscored by a very subtle woody touch from the reserve wines.
On the palate, the wine reveals a racy, energetic and creamy texture. Flavors of ripe citrus fruits are present. The finish is delicate, carried by the freshness of the Vertus terroir.
Thanks to its vinous structure and careful production, this winemaker's champagne can be enjoyed now for its vibrant fruitiness or cellared for 3 to 5 years to develop greater complexity.
Serve this Rosé Vinothèque at around 10°C. Its creamy texture and energy deserve a large white wine glass to express themselves fully.
The term "Vinothèque" at Veuve Fourny is not insignificant: it refers to vintages that have been aged for a long time on lees before being released for sale. In addition, the choice to use "grape sugar" for the dosage (instead of cane or beet sugar) is a rarity that allows for total harmony between the wine and the expedition liqueur: we remain 100% in the world of grapes.
