      The making of Blanc de Blancs 2019

      This cuvée is the pure expression of the "La Côte" vineyard (Côte des Blancs), and more specifically theAvize cru, renowned for the finesse of its chalk.

      "Haute Couture" Vinification

      The quest for precision guides every stage of the production process:

      • Selection: 100% Chardonnay harvested at perfect maturity (harvested on September 13, 2019).
      • Wood aging: 23% of the wines are vinified in oak casks, bringing a vinous structure and delicious notes (white chocolate) without weighing down the wine.
      • Preserved freshness: 0% malolactic fermentation. This crucial choice preserves the natural acidity of the grapes, guaranteeing vibrant tension and immense aging potential.
      • Dosage: 7 g/L, a precise dosage to magnify the substance.

      The 2019 vintage

      2019 is an exceptional and unique vintage, marked by a veritable climatic "yo-yo." Extremes followed one another, intense and sometimes violent. These conditions gave rise to a harvest of rare quality: the juices combine impressive solar maturity with remarkable concentration, while retaining the chalky freshness of Avize.
