The Chardonnay Vintage 2000 is a Pol Roger Blanc de Blancs, from the best grapes of the Cote des Blancs (Oiry, Chouilly, Cramant, Avize et Oger).
What gives this wine its prominent character is that it is aged for nine years in Pol Roger caves (the deepest in Epernay), before it is launched.
To preserve the crispness and vivacity of its wines, the musts underwent two cold settlings before fermentation in stainless steel to preserve the fruity characteristics of the wine. This clarification technique is Pol Roger Champagne specificity.
The 2000 Chardonnay Vintage is pale dense gold color, with light shades of green.
The perfumed bouquet evokes apricot, yellow peach, quince and lovely candy citrus notes, that also remind reinette apple.
After a few seconds, it evolves into sweet bread and toasted characters. Then, some fresh botanical and floral notes appear: liquorices, violet, and anise.
An elegant style for a champagne of rich fruity notes, with a crisp mineral palate.
