The production of Fleuron 2019
Made exclusively from Chardonnay, Fleuron 2019 is a champagne that showcases the great terroirs of the Côte des Blancs. The blend is based on a subtle balance between 75.5% Grands Crus and 24.5% Premier Cru. It is composed of the following parcels:
- 39.2% Cramant Grand Cru – Adds richness and texture, with notes of candied citrus.
- 36.3% Chouilly Grand Cru – Adds finesse and length, with floral nuances.
- 24.5% Cuis 1er Cru – Infuses beautiful mineral tension and remarkable liveliness.
The winemaking process follows a traditional approach, aiming to preserve the purity and elegance of the Chardonnay. After manual harvesting, the grapes are pressed in stages, followed by cold settling. Alcoholic fermentation is temperature-controlled for optimal aroma control, before being completed by malolactic fermentation to soften the acidity. The wine is then aged for 8 months in vats, cold-stabilized and filtered on clay before being bottled on April 28, 2020. It is then aged on lees for over 4 years before being disgorged 3 months before release. Its extra-brut dosage (4 g/L) enhances its balance between freshness and depth.
