Only the first pressing is used to guarantee purity of aromas and an authentic expression of the terroir. Vinification follows a traditional method aimed at preserving the wine's freshness and complexity. Malolactic fermentation is carried out, and some of the wines are aged in barrels to enrich the aromatic palette.
The distinctive feature of this rosé is the addition of 7-8% red wines, obtained by maceration from Pinot Noir from Mareuil-sur-Ay and Les Riceys. This technique gives the cuvée a delicate salmon color and remarkable fruit intensity. The moderate dosage (9 g/l) preserves the balance between freshness, vinosity, and purity.
Finally, the cuvée is aged on lees for 3 to 4 years, well beyond the legal requirements, thus promoting greater complexity and a silkier texture.
Royale Réserve Rosé Philipponnat is a non-vintage champagne. It is a blend of several vintages to ensure consistent aromas and optimal quality. The addition of 25 to 30% reserve wines, aged in wood according to the perpetual reserve method, brings extra depth and beautiful complexity to the wine.
