The production of Philipponnat's Cuvée 1522 Premier Cru Rosé 2014
This exceptional cuvée is the result of a precise blend that highlights the nobility of Pinot Noir:
- 82% Pinot Noir: from the vineyardsof Ay (Le Léon), Mailly and Verzy, it provides structure and power.
- 17% Chardonnay: from Verzy, it brings freshness and elegance.
- 8% Pinot Noir vinified as red wine: selected from the best plots in Mareuil-sur-Ay, it enriches the cuvée with fruity and spicy nuances.
The winemaking process is meticulous, aiming to preserve the fruit's brightness and develop a unique complexity. Part of the wine is fermented in wood, without malolactic fermentation, to preserve its freshness and accentuate its aromatic depth. The cuvée's pink color is obtained by adding a still Pinot Noir from the famous Clos des Goisses during blending. With an extra-brut dosage (4.25 g/l), the wine's purity is preserved, highlighting its minerality and natural expression.
This cuvée benefits from eight years of extended aging, allowing the secondary and tertiary aromas to develop while retaining the freshness essential to the balance of rosé champagne.
