Blanc de Noirs 2016 from Philipponnat is a cuvée that offers both gourmandise and tension. It's a champagne to be served both as an aperitif and at the table with white meat or shellfish.
Blanc de Noirs 2016 Philipponnat is made exclusively from the first pressings of Pinots Noirs Premiers and Grands Crus, located on the Montagne de Reims and the Marne Valley with Mareuil-sur-Aÿ and Avenay-Val-d'Or.
This cuvée was vinified mainly in stainless steel tanks (80%), but part of the wine (20%) was vinified and aged in oak barrels to add fatness and patina. The wine is dosed Extra-Brut to combine freshness and vinosity, without masking the wine's character and purity.
This Blanc de Noirs 2016 Philipponnat has a slightly coppery gold color. Its bubbles are fine and pearly.
The nose reveals notes of white fruit, followed by dried fruit. Finally, on the second nose, a spicier touch, reminiscent of cinnamon, emerges.
On the palate, the wine's attack is both fresh and elegant, before giving way to a creamy, rounded mid-palate. The aromas discovered on the nose are repeated. The finish is fresh and elegant, with a slight gourmand touch.
This Blanc de Noirs 2015 Philipponnat is a champagne with which we can really have fun finding fine gastronomic pairings.
