With Fins Lieux No. 7, David Péhu wanted to isolate this unique terroir, which he had previously intended for trade, in order to highlight its pure and tense character. Vinified and aged entirely in stainless steel vats, without malolactic fermentation, this champagne faithfully reflects the minerality and precision of Villers-Marmery.
The Les Chouettes vineyard is located in Villers-Marmery Premier Cru, on the eastern slope of the Montagne de Reims. The chalky soils, covered with thin layers of clay, give the Chardonnay a natural tension and straightforward energy. The exposure is balanced, offering slow ripening that promotes freshness. This vineyard, carefully cultivated using methods that respect living organisms, produces grapes of remarkable precision, marked by a unique floral and saline signature.
Fermentation and aging are carried out in stainless steel vats to preserve the aromatic purity of the Chardonnay. True to the house style, no malolactic fermentation is sought in order to preserve the tension and liveliness of the wine. After vinification, the cuvée rests for several months on fine lees before bottling, then ages for a long time in the cellar. The Extra Brut dosage (3 g/L) highlights the straightforwardness and natural elegance of this champagne. Limited production of approximately 2,500 bottles.
The year 2015 was marked by a hot, dry summer, preceded by a mild, wet winter. The grapes reached a beautiful maturity, while retaining a balanced acidity thanks to the cool nights at the end of the season. This generous vintage reveals full-bodied, precise, and luminous wines. In Fins Lieux No. 7, the Chardonnay expresses notes of ripe citrus, white flowers, and remarkable chalky tension. A sunny vintage, mastered by highly precise winemaking.

Fine and delicate. Aromasof fresh citrus, white flowers, and wet chalk. After aeration, notes of green apple and lemon zest appear.

Store the Fins Lieux n°7 Villers-Marmery 2015 cuvée at 10–12°C in a stable, humid cellar, away from light. This cuvée can be kept for 5 to 8 years. It will develop notes of fresh hazelnut, brioche, and honey while retaining its tension and precision.
Optimal window: 2025–2033. Between 2025 and 2028, the wine expresses its freshness and floral notes. From 2029 to 2033, it rounds out with nuances of fresh butter, almonds, and dried fruit. The Chardonnay always retains a subtle saline structure on the finish.
We recommend serving Fins Lieux n°7 2015 at 9–10°C in a fine tulip glass. This temperature allows the finesse of the bubbles and the tension of the Chardonnay to express themselves.
